Sandwich Casserole

The idea for this comes from Bethany Jean Clement, food writer for the Seattle Times. While it's easy to adapt the basic idea on the fly, depending on what leftover sandwiches you have on hand, I turned it into a recipe for those whose brains need the details in such a form. Depending on the type of sandwich, think about adding chopped olives, roasted or pickled peppers, hummus, guacamole, or extra leftover vegetables.
½ leftover hot sandwich or burger (including bread), lettuce or leafy greens removed
1-2 tablespoons broth, marinara sauce or mozzarella brine
2-3 slices cheese
Preheat the oven to 350 degrees F.
Chop up the leftover sandwich, into small (one-half-inch to one-inch) pieces and pack them loosely in a two-cup, oven-safe ramekin. Drizzle on the broth and top the casserole with cheese. Bake for 10 to 15 minutes, until the cheese is melted and bubbling, and the casserole is hot through.
